Don't settle

Most household kitchens have a set of black, plastic handled production knives in the drawer. They can certainly get the job done but are most likely dull and uninteresting. I believe that preparing a meal doesn't have to be that way. I make my kitchen knives to be razor sharp right out of the box, making food preparation easier and more enjoyable. I love to personalize each handle that I make utilizing the most beautiful wood from around the world. 

 

Steel types

There are two main types of steel, carbon steel and "stainless" steel. Each has advantages and disadvantages.

Carbon steel: The two I use for my kitchen knives are 52100 and Hitachi Blue Steel. They both get incredibly sharp. I have a limited amount of Hitachi Blue steel from Japan. It is only available in Japanese style knives at this time. It is amazing steel that holds an edge very well. These will develop patina with normal use and will rust if not cared for. They are, in general, more easy to sharpen.

Stainless steel: A few that I like for the kitchen in this category are AEB-L (my "go to" stainless), S35VN, CTS-XHP and CPM-20CV. These are less likely to rust so they require less maintenance. In the case of CTS-XHP and CPM-20CV are more difficult to re-sharpen.
